65 Degrees North Recommends Christmas Recipes: Italy Print E-mail

This quick Italian traditional recipe is the perfect accompaniment to meat dishes, and a ‘must’ on all Italian tables at Christmas lunch. Buon appetito e Buone Feste!


SALSA VERDE


3 cups chopped parsley
1 medium onion
1 green pepper
1 tablespoon tomato puree
3 tablespoons vinegar
3 tablespoons sugar
salt
a little broth or water.

Heat some oil in a pan, then add the sliced onion, diced pepper and finely chopped parsley. Simmer for 5 minutes.
Stir in the tomato puree, 3 tablespoons of vinegar, 3 tablespoons of sugar, salt to taste, and a little broth or water.

Cook for approx. 25 minutes; serve with boiled meat .
